The most “Aegina-style” salad you’ve ever tasted!

Every place has its own flavors, colors, and aromas. Aegina is known for its pistachios, its bright sky, and its turquoise-blue waters. Can all of these coexist in a single… salad? Of course they can—creating a very nutritious, balanced, and delicious recipe!

  • Mixed salad greens
  • Lettuce
  • Green lollo (curly lettuce)
  • Red lollo
  • Cherry tomatoes
  • Aegina pistachios
  • Geremezi cheese (or Katiki Domokou)
  • Olive oil
  • Balsamic vinegar
  • Petimezi (grape molasses)
  • Salt
  • Freshly ground pepper

Roughly chop—preferably by hand—the mixed greens, lettuce, and lollo, and place them in a deep bowl. Whisk together equal parts olive oil, balsamic vinegar, and petimezi, adding a little salt and freshly ground pepper. Pour this dressing over the greens.

After mixing well, transfer everything to a salad bowl and cut the cherry tomatoes on top. Add the geremezi cheese and finally the Aegina pistachios.

The result is a filling salad with a sweet-and-sour flavor and many beneficial properties!
