How to… wine-steamed mussels! The perfect recipe for steamed mussels! Fresh mussels are an excellent ingredient that we find in abundance in our seas! What could be tastier, more Greek, and—above all—easier than a delicious dish of steamed mussels? The following recipe is tried and tested and has been on our tavern’s menu for the past 7 years. Ingredients 12–15 fresh mussels 1 clove garlic, finely chopped 4 tablespoons olive oil 1 wine glass of dry white wine Freshly ground pepper Fresh parsley, finely chopped Instructions Wash the mussels thoroughly. In a deep pan, add the olive oil and garlic, letting it soften gently while being careful not to burn it. Add the mussels, carefully removing their “beards,” and deglaze with the wine. Cover the pan with a lid until all the mussels have opened. Remove the mussels from the pan and place them in a deep dish, leaving their juices in the pan to reduce slightly.
