How to… wine-steamed mussels! The perfect recipe for steamed mussels! Fresh mussels are an excellent ingredient that we find in abundance in our seas! What could be tastier, more Greek, and—above all—easier than a delicious dish of steamed mussels? The following recipe is tried and tested and has been on our tavern’s menu for the past 7 years. Ingredients 12–15 fresh mussels 1 clove garlic, finely chopped 4 tablespoons olive oil 1 wine glass of dry white wine Freshly ground pepper Fresh parsley, finely chopped Instructions Wash the mussels thoroughly. In a deep pan, add the olive oil and garlic, letting it soften gently while being careful not to burn it. Add the mussels, carefully removing their “beards,” and deglaze with the wine. Cover the pan with a lid until all the mussels have opened. Remove the mussels from the pan and place them in a deep dish, leaving their juices in the pan to reduce slightly. Aegina pistachio spoon sweet! The pistachio, the trademark product of Aegina, is a favorite among both locals and visitors to the island! Most people enjoy it roasted, seasoned with salt and lemon. Some prefer it simply lightly roasted and unsalted. A lucky few get to eat it fresh, straight from the tree! Pistachio ice cream, pistachio tray-baked desserts, pistachio “submarine” sweet, pistachio pasteli, pistachio mandolato, pistachio chocolates, pistachio praline… there are so many different ways to enjoy it! For me, however, the most special one is pistachio spoon sweet! To make pistachio spoon sweet, first of all, we need to harvest the nuts while they are still tender. Then, we select them one by one, boil them, and in our pot we add sugar, lemon juice, and flavor with vanilla. Enjoy it on its own or served over your favorite yogurt or ice cream! Aegina’s delicious local fish! Katsoula, Aegina-style! Katsoula is a small, tasty fish that we find in the summer only in the waters of Aegina! Its color—vivid orange with sea-blue reflections—captures the eye and inspires unique culinary experiences. Its delicious flesh, along with the fact that it has very few bones, makes it one of our favorites! Η νόστιμη σάρκα του καθώς και το γεγονός ότι είναι ψάρι χωρίς πολλά κόκαλα το κάνουν ένα από τα αγαπημένα μας! How to cook it Clean the fish by removing the insides and rinse them without scraping. Add butter to a pan and let it heat up. After patting the fish dry, place them in the hot butter without coating them in flour. Once they develop a beautiful golden color, they are ready! The tastiest soup to strengthen our immune system in winter! This is the easiest, lightest, tastiest, quickest, and most nutritious soup for the winter. Enjoy it and boost your body’s defenses against the flu and the common cold! Ingredients (serves 4) 2 skinless chicken fillets, cut into bite-sized pieces 2 large carrots, sliced 4 small zucchinis, sliced 1/2 bunch celery 1 red pepper, diced 1 onion, finely chopped 1 tomato 40 g manestra (small pasta) 4 tablespoons olive oil Juice of 1 lemon Salt and pepper 4 tablespoons yogurt Instructions Take a large pot and add the olive oil and onion over medium heat. Once the onion softens and turns lightly golden, add the chicken and sauté lightly. Deglaze with the lemon juice, then add the vegetables and cover with water. When the vegetables are tender, add the manestra, salt, and pepper, and cook for another 15 minutes. Your soup is ready! For extra flavor and probiotics, serve by adding a spoonful of yogurt to each bowl. The most “Aegina-style” salad you’ve ever tasted! Every place has its own flavors, colors, and aromas. Aegina is known for its pistachios, its bright sky, and its turquoise-blue waters. Can all of these coexist in a single… salad? Of course they can—creating a very nutritious, balanced, and delicious recipe! Ingredients Mixed salad greens Lettuce Green lollo (curly lettuce) Red lollo Cherry tomatoes Aegina pistachios Geremezi cheese (or Katiki Domokou) Olive oil Balsamic vinegar Petimezi (grape molasses) Salt Freshly ground pepper Instructions Roughly chop—preferably by hand—the mixed greens, lettuce, and lollo, and place them in a deep bowl. Whisk together equal parts olive oil, balsamic vinegar, and petimezi, adding a little salt and freshly ground pepper. Pour this dressing over the greens. After mixing well, transfer everything to a salad bowl and cut the cherry tomatoes on top. Add the geremezi cheese and finally the Aegina pistachios.
