Ingredients (serves 4) 2 skinless chicken fillets, cut into bite-sized pieces 2 large carrots, sliced 4 small zucchinis, sliced 1/2 bunch celery 1 red pepper, diced 1 onion, finely chopped 1 tomato 40 g manestra (small pasta) 4 tablespoons olive oil Juice of 1 lemon Salt and pepper 4 tablespoons yogurt Instructions Take a large pot and add the olive oil and onion over medium heat. Once the onion softens and turns lightly golden, add the chicken and sauté lightly. Deglaze with the lemon juice, then add the vegetables and cover with water. When the vegetables are tender, add the manestra, salt, and pepper, and cook for another 15 minutes. Your soup is ready! For extra flavor and probiotics, serve by adding a spoonful of yogurt to each bowl. The most “Aegina-style” salad you’ve ever tasted! Every place has its own flavors, colors, and aromas. Aegina is known for its pistachios, its bright sky, and its turquoise-blue waters. Can all of these coexist in a single… salad? Of course they can—creating a very nutritious, balanced, and delicious recipe! Ingredients Mixed salad greens Lettuce Green lollo (curly lettuce) Red lollo Cherry tomatoes Aegina pistachios Geremezi cheese (or Katiki Domokou) Olive oil Balsamic vinegar Petimezi (grape molasses) Salt Freshly ground pepper Instructions Roughly chop—preferably by hand—the mixed greens, lettuce, and lollo, and place them in a deep bowl. Whisk together equal parts olive oil, balsamic vinegar, and petimezi, adding a little salt and freshly ground pepper. Pour this dressing over the greens. After mixing well, transfer everything to a salad bowl and cut the cherry tomatoes on top. Add the geremezi cheese and finally the Aegina pistachios.
